I have two WD 500gb SE16. I want to put all my music, pictures and movies and stuff on one and use the other for XP. I have never had more than 1 hard drive so I'm pretty much clueless if this is considered Raid.

No that’s just having another hard drive congrats on moving to two :p
There are various types of Raid and im sure someone can come in and go into detail about each one but basically raid takes information and mirrors it on both drives for various reasons depending on which type you use

Yup. That's the way you "want" it too, since RAID is rarely appropriate for a desktop computer.
RAID is designed to meet the needs of a server-type environment - primarily by increasing uptime by sharing a logical volume across several physical drives in a way that allows it to continue to operate in the event of one or more drive failures. Depending on the RAID type, there are a number of gains and losses, and the type of RAID is chosen to suit the specific type of server (for example, a database server with a high number of simultaneous users that would choke up a single hard drive). For a desktop user, a single hard drive or multiple individual drives are usually just right, so the gains from RAID aren't significant and there's no reason to accept the losses.

With two disks, I'd keep them separate. Plus, those disks are not made to do RAID, so that in itself would mean to keep them separate. ;)
