I assume that this is a full released version. If so, if I use it exclusively, as MS releases updates, etc, I assume that I will be able to utilize these updates?
I wont need to go get one of the releases from January, correct?

Vista Business is available for purchase, yes. It is the real deal just as if you'd go to a store and buy XP Professional today. So yes, as Windows Updates are released, if you have the legitimate retail product then you won't have any issues with accessing them.
Vista Home, Home Premium, and Ultimate are the consumer oriented products that won't be available in retail channels till January 30th, 2007. Not sure about whether Vista Enterprise is currently available, but as it's basically Vista Business on steroids, it probably is.

Enterprise is just Business with a different PID to accept KMS keys instead of regular MAK keys.

Enterprise has the Bitlocker drive encryption technology included with it.
