Warhammer: Dawn of War
And Starcraft is probably the best of the bunch out there for LANs if you're thinking RTS.
With only 5-6 people it's difficult to get team-based games going because most of the games are geared towards more players. For instance all the BF2 tournaments I've been in have been for teams of anywhere from 5-8 people - that's PER TEAM, and the smallest maps are choosen.
For small numbers of people, either play free for all or look for games that don't support many players. If a game only supports say 8 players maximum, then you know it will work fine for 5-6 people. For instance, most RTS games fall into this category, and there's so many of them out there that you guys can play one per LAN and be gaming every weekend for months. Starcraft/Broodwar, Generals/Zero Hour, Warcraft III, Warcraft II, TA Kingdoms, Rise of Nations...
If you play FFA in a FPS game, use small maps. Having to spend time searching for an opponent gets boring.
Other things to try is to break out of the typical FPS and RTS mold that typifies LAN parties. Last night, just to liven things up, I hosted a Monster Truck Madness 2 tournament at the 20 person LAN I attended. About half the people joined in and it was a blast. We played Arena Rumble mode.
Motocross Madness 2 Arena Tag (with ball) is really fun for smaller LANs. If people have the controllers, then various driving games are fun. Crimson Skies is also really fun if you have game controllers. I've played Soldat once ever, but it looks like it may be fun for small groups. Various Worms games...
Also, consider various mods for existing games, such as Invasion for UT2004 or those endless defending ones for Starcraft.
Oh yeah, I've also heard *somewhere* that Flatout is fun.

Flatout is awesome for small LANs. I've had mucho experience with that little game. It's sometimes buggy getting a LAN game going so make sure you have the same version!
BF2 not so awesome for small LANs. When the next BF2 patch is released there will be a single player/LAN co-op mode. THEN it will be ready for the small LAN. :D

Rune! The viking hack n' slash! They have a free downloadable demo (which is better than the full version, honestly) that can provide hours of fun. Used to play that at lan games all the time.

Small games like Armagetron (Networked Tron lightcycles, basically) can be surprisingly fun. Easy to understand, easy to get into, and a relatively small amount of players is a bonus, compared to BF1942 and the like.
Need for Speed can be fun, partially from a show-off point of view ("Ha! I bet YOU don't have the Castrol Ford GT!"), and partially from a head to head point of view. Turning off collision detection is something of an error, to my mind.
The old standby, CS1.6, can be fun. Until you get sick of being killed by the same goddamn person for the umpteenth time.
Starcraft and the like are also fun, even for spectators. (Offers to screenwatch for pizza should be treated with all the respect they deserve.) Even if the whole genre is a rip-off of Dune 2. That game rocked hard.

We played FEAR at the last LAN party I went to with around 6 players and it was a lot of fun. DM mostly for only 6 or so, but with more the CTF was nice... ;)

Because it's a LAN and if you dont have the game you can usually get it. ET is a decent one though.
