"Better" for what? The WD is OOM (http://en.wikipedia.org/wiki/Orders_of_magnitude) better for playing games with, but the Seagate is probably better for a media storage drive - slightly higher STR, quieter (if acoustic management is on!) and lower heat.

how about between the WD and Hitachi's new T7K250 250GB drive? Any ideas/recommendations then?

It's not literally orders of magnitude, of course - almost nothing would make that difference. But there's a bit of difference (http://www.storagereview.com/articles/200601/250_5.html), and not a whole lot of reason to buy the Seagate for playing games.
The only reason I went to the trouble of linking OOM is I wasn't sure if people would know what I meant by it or if they'd think of "out of mana".

Well I decided to go with the WD2500KS in the end as it was a little cheaper than the Seagate and it had higher cache.
Received my new WD2500KS drive, hooked it up and after formatting to NTFS the drive is reading under HDtune and Everest as running at 42C. That seems a bit high? My other two Seagates are idling about 35C.

Eh? It's definitely on the upper end of the spectrum, though within a comfortable margin.

I don't know about cool; that's only 13 C from the maximum specified operating temperature. I'm not saying it's a problem, but if you have options on where to put your case fans (or can move the drive, for that matter) nearer a fan might help.
